This is the way I like to cook a steak about as hot and fast as you can get it. But, you have to stay right on top of it or else it will over cook in a heart beat.

I think he was just putting a char on the outside, I noticed he put it back on after putting a rock in to knock the fire down. You're right though, that would have been a might rare.

You don't have to have a lot of fire to make good steaks. Dad had a cast iron hibachi that was as quick and easy as it gets.

Believe it or not, for a long time we were stuck on marinating our steaks with Tabasco and A-1 Sauce for about 4 hours before we grilled them. Now, we use garlic powder, Tony Chatcheryiers ( I know) salt and pepper and Italian salad dressing. We let then sat for about 4 or 5 hours and get happy before we fire them up, which is every Saturday night.

I have a park model grill, a smoker and a propane oven/grill. I'll have to get a pic. On the patio I have a pit smoker, 55 gallon stainless steel barrel smoker/grill - Chicken and Hamburgers (that is about 40 or 50 years old and is still in great shape), a $10 camping grill (the steak cooker) and a brand new Charbroil Tru-Infrared gas grill (Not sure why we have it.....)
