I finally cooked my first brisket, and it was pretty good. I did it on the Traeger, we don’t have a regular bbq pit. I let it smoke for 3 hours, then turned the temp dial to 225 and let it go 4 hours, bumped up the temp to 275 for an hour, then wrapped it in foil and cooked for 1 more hour. It didn’t have a great smoke ring, but it was so juicy and tender. It was a learning experience for sure, and I’m ready to do another one.

We tried our vacuum sealer on our last one, it's just the two of us. We ate on it for about two days, sliced it up and then vacuum sealed up about 6 or 8 bags to freeze. I am telling you the vacuum sealed bag brisket was just as good as when it came off the pit.

We just recently had our high school rodeo team reunion. I smoked 105 lbs of brisket and butts. It was the slicin' that got me. I need an electric knife if I ever do that again.
