After watching that video, I was curious are we like the slowest people to do this? It averages us around 30 to 45 minutes to take care of a deer and we don't even gut them. We hang up up by the back legs, skin them, cut off the shoulders, cut out the back straps and then take off the hams.
How about you guys?

I have never processed my own Deer. I have Pigs, but never a Deer. I am lucky enough to have a processor about 25 miles from our ranch. So if it's hot, we take 'em to them. We have another processor in Joshua about 8 miles from here at the house. Susan used to work across the street from them at Modern Taxidermy. She had the keys to the processor in case they had any deliveries when they weren't there. I really like Joushua Deer Processing's work. They really take the time to properly bone out a Deer. They vacuum pack everything. I like that. I have never timed how long it takes me to dress a Deer. Blake, my daughters ex bf, showed me a different way to do the south end without splitting their pelvic bone that is so much faster and our processor said that this method would render more steaks than splitting the pelvic bone. I would guess it takes me about 10-15 minutes to hollow one out.

Hubby does the same, hangs from hinds and skins & quarters, doesn't gut, depending on how cold it is outside or if we are in a time crunch, average time is 30-45 minutes.
