I said the same thing 15 or so years ago , but when I saw James's kids waiting with toothpicks in hand for the next batch to hit the plate I figured I would try it at least , and the rest is history , so far everybody that has tried it this way has been surprised and then stayed to clear the plate , it is a lot of work prepping the heart but worth it , soak heart in salt water mix and drain blood , then cut all " white stuff " ( non-red muscle meat ) off and cut into small pieces and strips , then sautee in butter , garlic and red wine , you will not be disapointed

my yankee (Connecticut ) neighbors came to try and stayed to finish , they said the same thing and she is 13 year old girl
