Well as you know by now,I made a chicken pot pie the other night.I had thawed out a family package of boneless skinless chicken breast to make it.When I bought the large pack of chicken I didn't realize I was out of bags for my vacume sealer.I usually repackage it,two breast to a bag before freezing it.To make a long story longer,I only used two pieces for the pot pie and had four left thawed out.So tonight I decided to go ahead and do something with them.This is what I came up with,
I softened 8 oz of cream cheese,finely diced about 1/4 cup of onion and used a 16 oz bag of fresh frozen spinach.Mixed up the cheese,onion,and spinach in a mixing bowl.Then used my paring knife to cut into the side of the breast to form pockets the length and width of the breast.
Stuffed the mixture into the pockets in the chicken.
Sprinkled both side of them with Reata Grill Seasoning
Wrapped them with bacon and another dash of Reata
Popped them into a preheated 350 degree oven
And Wallah! Baked for 1 hour and the are amazingly good!

I bet they smelled good while cooking. Good idea There's no such thing as a "Bad Smell" when it comes to bacon.

Lol your right about that Tony! They made the whole house smell terrific Connie lol !

i like that! i'll put smoked ham and cheese in mine and wrap with bacon sometimes they always turn out good! thanks for sharing
