Dinner for tomorrow night prepared sunday night.This is why I love casseroles!
2# ground venison 2 cans cream of mushroom soup 2 reg. size cans ranch style beans,drained but not rinsed 2 cans green chili's,drained Corn tortillias Shredded Sharp cheeder cheese 1 med.sized onion,chopped about 2 TBSP minced garlic salt and pepper to taste. 1 1/2 TBSP olive oil
Place oil in a large skillet and toss in the chopped onion and garlic.cook until onion is tender and add the ground venison.Brown the meat well and drain the fat off.Return the meat into the skillet with the onion and garlic.Add the soup,beans and chili's and mix well while heating on med/low heat.Line a 9X13X2 baking dish with tortillias to cover bottom and the sides.Add Half the meat mixture and cover with cheese.Cover that layer with more tortillias and add the other half of the meat.More cheese on top and place into a preheated 350 degree oven for 30-45 minutes until cheese is melted and its heated thru.Serve with a side salad and top with your favorite salsa to spice it up a bit!
